Just wanted to say a warm springtime hello! And wish you a happy Easter! 🐣 Let this quiet week bring peace and joy to our hearts.

Our choice today is Rabamari calendula & peppermint infusion. During medieval times, calendula was widely used and was known as “poor man’s saffron” as it was used to color foods. By the way, did you know, that a tea of the calendula flowers comforts your heart.

Every Spring I try to lower my sugar intake. How about you? Do you succeed? I really love baking at weekends so, it’s quite difficult to reduce the weekly sugar load. Thankfully I have found a great alternative to white sugar, and I’d love to share my new recipe with you!
Take a look:
1 cup butter (softened)
1 cup coconut sugar (really a healthy sugar alternative)
1 tsp vanilla extract
zest from 2 lemons (about 1 1/2 tsp)
4 large eggs
1 cup ricotta
2 1/2 cup whole grain oatmeal flour (gluten-free!)
4 tsp baking powder
1/4 tsp salt
1 tsp fresh lemon juice
Rabamari “Restore & Relieve” herbal infusion (peppermint & calendula) for “dusting”
